SOUTHERN BISCUITS

 

As they stand, these are great next to chili.
Add about twice the sugar, and these are sweet scones.

Either way these are flakey delicious! The best ever!

 

INGREDIENTS:

  • 2 cups all-purpose flour
  • 3 tbsp sugar
  • 2 tsp baking powder
  • 1 tsp salt
  • ½ tsp baking soda
  • 1/3 cup shortening
  • 2/3 cup buttermilk or 2% milk

INSTRUCTIONS:

  1. Preheat oven to 450 degrees.
  2. Mix flour sugar, baking powder, salt and soda together
    in a bowl.
  3. Cut in cold shortening. Blend until mixture looks like meal.
  4. Stir in almost all of the milk (if dough is not pliable, add
    just enough milk to make a soft, puffy, easy-to-roll dough.
    Knead lightly 20-25 times.
  5. Roll out a little less than ½ inch thick.
  6. Cut into 3-inch circles. Or you can roll it into a big circle and slice the pieces like a pizza.
  7. Separate each piece. Place on ungreased baking sheet.
  8. Bake 10-12 minutes or until golden brown.

THE SECRET:

Add an additional 3 tbsp of sugar and sprinkle a little on top before baking to get tasty sweet scones.
You can also add cheese, raisins, craisins, or any other dried fruit. You can include fresh fruit like blueberries or
strawberries but you'll need to add more flour to compensate for the additional moisture.

These should be eaten within the first 24 hours or freeze them to keep them pillowy soft.

Serve it warm with a little homemade jam.
